All our ciders are made in small one-off batches. They have been fermented and matured slowly to allow the flavours to develop and the acidity from local fruit to integrate with the tannins from the cider apples of the West. We hope you enjoy them as much as we do.
All our labels are inspired by people, places or friends that have added positively to our cider journey.
Our 2025 Releases

A very lightly sparkling cider and our second blend from an orchard in Skidbrooke, Lincolnshire. It is also our last commercial bottling.
Nose: Clementines, apricot, sandalwood, gentle spice
Taste: oranges, red apples, stone fruit and a hint of clove. With a gentle acidity and a very smooth, dry but fruity finish.

A cider made from a single variety of apple; the Kingston Black. Picked in 2024 from an orchard in Skidbrooke, the same orchard that our Red Streak and Smooth Sailing are made from. Very limited release, not available wholesale.
Nose: Tarte tatin, honey and yellow stone fruit
Taste: Honey, caramelised apples, orange rind and ripe figs. Very gentle acidity, light astringency and a smooth dry finish.
This cider has some sediment so store upright and pour slowly.

A sparkling cider with a mousse reminiscent of some of the best champagnes. 70% eating and culinary apples from an orchard in Brinkhill, in the Lincolnshire Wolds, along with 30% barrel-aged Dabinett cider apples. This cider has been bottle conditioned with sugar and sparkling wine yeast to give it a glorious sparkle.
It hasn’t been in bottle long or disgorged, so for a light, crisp drink chill and pour carefully. For a more complex taste with toasted brioche notes, gently invert before opening to allow the natural sediment to mix.
Nose: Green apples, white flowers, lemon grass, oak
Taste: juicy green apples, vanilla and crisp citrus like acidity. The carbonation gives a full and tingling mouthfeel that leaves a lightly astringent and lingering dry finish.

Our 2024 Releases

This lightly sparkling cider is our first release from an orchard in Skidbrooke. This is the 2023 vintage and is mainly made from Somerset Redstreak cider apples. The name of which reminds us of the acrobatic display team that frequently fly over our cidery.
How to serve: very lightly chilled
The aroma: red apples, dried apricots, eucalyptus, green herbs and white pepper
The taste: full of red apple fruit with a hint of tropical (think light pineapple) and yellow stone fruit. There is the start of some brioche biscuity notes, but these will develop over time. Tannins are soft, acidity is gentle and the finish is dry but juicy.

This cider is a blend of locally foraged apples from village gardens and small orchards. It is light, floral, crisp and reminds us of the joys of spring when blossom is bursting, warmth is returning and nature is awakening.
How to serve: lightly chilled, as you would a white wine
The aroma: green apples, lemon skin, tropical fruit and hints of vanilla
The taste: fresh juicy apples, pineapple and tropical melon. A flourish of mouth tingling acidity, gives way to smooth creamy vanilla and juicy fruit finish.
Our 2023 Releases

A blend of Dabinett and mixed garden apple varieties, which together have created a smooth, well-balanced drink. It pours a glorious gold colour, just like the sunrise across the River Witham near our cidery.
How to serve: very lightly chilled
The aroma: crisp green apples meets autumn flora. Young brandy spirit entwined with oak, dried apples and plenty of spice.
The taste: Dabinett’s characteristic fragrant orange, vanilla and gentle spice is perfectly on show, coupled with hints of fresh green apples, but also aged wood character. There are little wisps of smoke that stand out, but tannins, acidity and sweetness are perfectly integrated, creating an incredibly, smooth, vinous and juicy cider.

A blend of 75% Dabinett (from 2019) which spent time in oak barrels and 25% culinary and dessert apples (from 2020). The result is full of smoky notes, chewy tannins and a brisk acidity. Inspired by our friends at Ross on Wye Cider & Perry, with thanks for their generosity of time and sharing of knowledge. Bottle conditioned with 10g/l of sugar, which has created a mouth filling frothy mousse. 7.5% abv & 750ml
How to serve: lightly chilled
The aroma: a combination of green apples, smoky barrels and lemon balm. Citrus vodka as it warms in the glass.
The taste: the lemon-like acidity of the culinary and dessert fruit jostles for domination alongside the spiced orange of the dabinett; the former just pipping it for us. Malolactic character has started to develop some vanilla creaminess, whilst the apples taste green and crisp. The finish is bone dry and the chewy tannins coat the sides of the mouth with astringency. There’s a savoury, salty character to it.

A blend of 80% Dabinett (from 2019) with 20% Crab apples (from 2020). The result is a handsome marriage of well-behaved tannins and a little wild youthful edge. Just like our beautifully brilliant Border Collie: Indy. Bottle conditioned with 10g/l of molasses, open and wait 30 seconds before pouring to allow any disturbed sediment to resettle. Pour slowly. 7.5% abv& 750ml.
How to serve: lightly chilled
The aroma: red apples, spiced orange and cinder toffee.
The taste: dried apples and citrus peel dominate the palate, with a background of juicy acidity. The molasses has added depth and baked sugar to the fruit. The finish is bone dry and brisk, leaving the palate clean and thirsty for more.

This cider is 100% Dabinett (from 2019) fermented and aged in an ex-red wine barrel. The result is well-rounded, mature and complex. A little like our grandfather Francis Cook, affectionately known as Franko. 7.8% abv & 750ml.
How to serve: very lightly chilled
On the nose: citrus orange flesh, vanilla and five spice, along with sandalwood, leather and wooden press racks.
The taste: juicy and dry, ripe red apples and orange squash. This is typical Dabinett with all it’s orange flesh, vanilla and spice coupled with the influence of the red wine barrel which has elevated all the elements as well as added some extra red fruit bitter tannins. A little flourish of acidity is quickly expelled by a long dry finish with a chalky texture.

A blend of 50% Dabinett, 25% Harry Masters Jersey and 25% Major all pressed in 2019. These three bittersweet varieties sing in perfect harmony, just like the blackbirds that provide the soundtrack to our cider making. 7% abv & 500ml.
Contains natural sediment so pour slowly, or tip upright before opening and savour the richness of the lees.
How to serve: very lightly chilled, can be drunk at room temperature
The aroma: wooden barrels, dried apple skins and hints of leather and tobacco
The taste: Dabinett brings bitter orange pith and woody cinnamon and clove spice, whilst the Harry Master Jersey gives ripe yellow stone fruit and plenty of mouth drying astringency. The Major meets in the middle of both. The apple is there but it’s aged and smooth, with a delicate balance of bitterness, sweetness and very mild acidity. This is a cider to sip and savour the rich mellowed tannins.
The finish is off dry due to a small amount of the sugar added for bottle conditioning not fermenting.

This cider is a blend of eating and culinary apples, many of unknown varieties. All sourced from garden orchards around Lincoln as well as a once abandoned city orchard which contains rare Lincolnshire varieties such as ‘Peasgood’s Nonsuch’, first grown from a pip by Mrs Peasgood from Grantham, and ‘Ellison’s Orange’, developed by the Reverend Ellison of Bracebridge.
How to serve: very lightly chilled
On the nose: green apples, lemon balm and peach flesh. Along with a fresh mountain breeze of pine needles and morning grass.
The taste: Tropical fruits adorn the palate with notes of pineapple, kiwi and cantaloupe, along with crisp green apples. There’s a gentle lemon like acidity that lifts everything to create a smooth, balanced and juicy combination. The finish is off dry with a slightly sweet viscosity that coats the mouth.
